Here's one for all sweet potato addicts like me. This dish is simple, delicious and warming. Just like winter dinner should be. I had it vegetarian style but my boyfriend had it with sausages which was a success by the look of the clean plate.
I think some spicy chorizo would go perfectly in this dish though :)
Here's what you need to make enough for 2 hungry people -
1 sweet potato
12 chestnut mushrooms
12 cherry tomatoes
Baby Spinach
1 onion
2 garlic cloves
Olive oil
White wine vinegar
Chilli flakes
Salt
Paprika
Cinnamon
Preheat your oven to 190 degrees. Cut your sweet potato in chunks, put on a roasting tray, drizzle with olive oil and add salt, paprika, cinnamon. Bake until soft (15-20 mins)
During this slice your onion, garlic and mushrooms and shallow fry with two tablespoons of white wine vinegar and chilli flakes until soft.
Add your spinach and tomatoes and fry until spinach is wilted.
Once done mix everything together and serve up!
Ovan ser ni ett recept för alla er som liksom jag är besatt utav sötpotatis. Denna rätten är enkel, värmande och supergod. Precis som en vintermiddag ska vara! Jag åt den vego men min pojkvän åt korv till och dömer man utifrån den rena tallriken var det en succé.
Jag tror kryddig chorizo skulle passa perfekt i denna rätten :)
