Cod with bacon, sun dried tomatoes and broken potatoes

On my days off I love to spend some extra time cooking. I found this recipe a while ago and have been dying to try it. Finally on Wednesday I had time for it and oh boy was it good! I was excepting it to be pretty awesome but it was event better. 
You all simply must try it! 

To feed 4 people you need - 

4 pieces of nice cod fillets
1 tsp of sambal oelek (here)
2 cloves of garlic
3 tbs of Flora Cuisine
1 packet of bacon 
1/2 red onion
8 pieces of sun dries tomatoes
1 tbs of fresh cut parsley 
Salt, pepper, thyme and oregano

Broken potatoes - 
800 g baby new potatoes
2 tbs of Flora Cuisine
Salt and pepper

Sides dishes -
400 g of carrots 
150 g of trimmed beans

Cut the red onion and bacon in to thin strips. Fry together for about 3 minutes before adding the thinly sliced sun dried tomatoes. Mix it all together.

Add Flora cuisine to an oven form and add the sambal oelek, chopped up garlic, salt and pepper and mix it all together. Put the fish fillets on top and add the red onion, bacon and sun dried tomato mixture. Top it all off with the parsley. Cook in the oven at 200 degrees for about 15 mins. 

Boil the potatoes until soft. Add Flora to an oven form, add the potatoes and beat them until a little bit broken. Salt and pepper them and stick in the oven on highest temperature on grill for about 5 minutes or until they're a bit crispy on the outside.

Boil the carrots and beans for about 5 minutes in lightly salted water.

Morning

I've been awake since 05.30, just couldn't sleep. Shame the gym doesn't open before 10am on weekends. Off to work in a short moment, working the weekend before I'm off to London on Monday to celebrate Christmas. I just wanted to wish you all a great Saturday! I

Jag har varit vaken sen 05.30, kunde inte sova. Lite synd att gymmet inte öppnar förrän 10.00 på helger men ska strax iväg till jobbet. Jobbar sista helgen nu innan jag åker till London på måndag för att fira jul. Ville bara önska er alla en riktigt härlig helg!

Delicious dinner

I really love cooking and watching cooking shows. Such a nerd I know! 
After been watching Master Chef I got inspired to cook pork. I saw that the guy who won made pork loin with sage wrapped in Parma ham and thought if that's a winning dish it must be good. Therefore I made my own version of it on Saturday. If it was good? Oh YES!
Would be fantastic if you could share your favorite recipe with me!

Jag älskar verkligen att laga mat och att kolla på matlagningsprogram. Töntig jag vet!
Efter att ha kollat på Master Chef blev jag inspirerad till att laga fläskfilé. Killen som vann gjorde en rätt med fläskfile med salvia inlindad i parmaskinka och tänkte att om det där är en vinnande rätt måste det vara gott. Därför gjorde jag min egna version i lördags! Om det var gott? Svar JA!

Butt workout challenge

I'm as usual taking part in Ida's challege. This week it's focus on our bums. I have definitely pushed myself harder than usual so I can just enjoy Christmas and not stress over lack of training. Here we go!!

HAPPY BUTT WORKOUT
- 20 lunges/leg
- 20 buttlifts
- 40 lateral skate jumps
- 20 squats with sumo kick
x 5

I did this on Monday and I'm just off to the gym  now for round two. I'm adding some other exercises to such as Bulgaria split squats ad leg press, should really burn once I'm done ;)

Jag är med i Ida's utmaning som vanligt. Fokus på rumpa denna veckan. Jag kör på hårdare än vanligt med träningen så ska jag ta det lugnt med gott samvete ett par dagar över jul och behöver inte stressa upp mig för att jag missar träningen. Nu kör vi!

Jag gjorde övningar listade ovan i måndags och idag kör jag igen. Ska lägga till lite andra övningar såsom benpress och bulgariska utfall, ska bränna rejält efteråt ;)

Heavenly chocolate mousse (guilt free)

This mousse taste like heaven. It's seriously one of the best desserts I ever made. It's gluten free, milk free and free from refined sugar so great for us with sensitive tummies. You must try it because it's just that good! 

To make 2 large portions of this goodness you need -

3 eggs (yolk and white split)
70-90 g chocolate (my choice)
2-3 tbs raw cacao powder
1 tsp carob powder
2-3 tbs almond milk
A sprinkle of sea salt
Frozen raspberries

Star with melting your chocolate over simmering water. Whilst it's melting mix your cacao powder with the egg yolks, carob powder and the almond milk. Carefully stir in the melted chocolate and mix it all together.

Whip your egg whites to a white hard foam. Stir it in to the other mixture, use a fork and make sure to stir the whole time. Once it's all mixed together pour in to two bowls/glasses and put in the fridge for an hour.
