Gluten Free Protein Bomb Quiche!

I made a delicious quiche the other day. An ordinary quiche is not very gluten free friendly but this version is both tasty, healthy and gluten free. My recipe is for 4 people and each serving comes to around 400 calories and 32 g of protein!

This is what you need for one quiche - 

400 g brown basmati rice (160 g raw)
200 g chicken breast
6 eggs
200 ml low fat creme fraiche
10 cherry tomatoes 
50 g mushrooms 
1 red onion
Parmesan cheese 
Salt, pepper, oregano 

Pre-heat oven to 180 degrees. Boil your rice. Once done mix one egg in to it and press into base of a quiche dish (edges to). Bake the crust for about 10 mins and after that turn up oven to 200 degrees. Start adding your vegetables to the base of the quiche followed by your chicken. 
Mix 3 eggs and 2 egg whites with the creme fraiche and add your salt, pepper and oregano. Pour mixture over quiche and add your grated parmesan cheese. 
Bake in oven for 40 minutes. 
Tadaa it's done ;) 

So easy and delicious! You can eat it hot or cold. I had a piece for lunch the day after and it was almost more delicious than the first time. Yum!

Jag gjorde en riktigt god paj häromdagen. En vanlig paj är inte särskilt glutenfri vänlig men min version är god, nyttig och glutenfri. Mitt recept är för fyra personer och varje portion ligger på 400 kalorier och 32 g protein! 

Den var så enkel att göra och du kan äta den kall eller varm så perfekt för lunchlådan! Jag åt en bit dagen efter och tycker nästan den var ännu godare då. Mums!
